Gooey chocolate fridge cake

I really need a new kitchen. The cupboard doors are falling off, the worktops slope down so that water runs into the corner and pools there behind the tea and coffee canisters. The tiles are so retro, they’re almost fashionable again. But mostly, I need a new kitchen so that I can take instaworthy pictures of my baking. For now, you’ll have to do with pictures taken in the fridge/on top of a biscuit tin/disguised with tea towels. But trust me, this fridge cake tastes better than the photos can do justice!

Gooey chocolate fridge cake

Ingredients:
300g dark chocolate, broken into chunks
100g butter
140g golden syrup
1tsp vanilla extract
200g biscuits, roughly chopped (digestives are good)
100g dried fruit (sultanas, cherries are good, but anything will do!)
85g rice krispies
100g ish chocolate beans/smarties etc. to decorate
50g ish white chocolate to decorate

Method:
Line a 20x30cm tin (or roasting tin, I even used my grill pan!) with baking parchment. Melt the chocolate, butter and golden syrup in a large bowl over a pan of simmering water until smooth and glossy (or in the microwave, in short bursts) Stir in the vanilla, biscuits, sultanas and rice krispies and mix well.

Tip the mixture into the tin and flatten down. Press in some chocolate beans and put in the fridge to set. Once set, melt the white chocolate and drizzle it over (I used a piping bag because I’m rubbish at drizzling with a teaspoon). Return to the fridge to set, and then cut into squares.

  1. Hold up? Have I just found a no-bake recipe? We’re moving into our new flat soon and to my disappointment it doesn’t have an oven, so I’m trying to find creative ways to make some treats nonetheless. Rocky Road, no-bake cheese cakes, and now this! I love it, and it looks fantastic. Thanks for sharing.
