Crouching Tiger, Hidden Zebra Cake

Cakes which look more exciting on the inside than the outside are very fashionable at the moment. And Lorraine has a version of the zebra cake in her recipe book.

Here is a similar recipe on bbcgoodfood. Lorraine’s version uses a vanilla mixture, and a chocolate orange mixture. However you do it, it needs to be a wet mixture, like a muffin mix so that it’s pourable – standard sponge mixture won’t work.

The trick is dolloping spoonfuls of mixture into the tin alternately. You just dollop into the middle, and the circles spread out as you go, until they reach the edge of the tin. Work quickly, so that the sponge doesn’t lose its raising power before going in the oven.

2014-01-24 13.17.20It would have been nice with a chocolate ganache or icing on top, but I was doing mine dairy-free, so I kept it plain.
