Well it was bound to happen really. Out of one hundred recipes, I forgot to take the photo for one. We had people over for dinner and there can be something a bit odd about whipping out your phone at the table to take pictures of your dessert. That’s my excuse anyway.
This is a nice simple recipe of pears, peeled but not cored, poached (simmered) in Sauternes or another dessert wine. Tesco didn’t have Sauternes, but it did have another half bottle of something similar (a white dessert wine). It’s also got sugar, lemon zest, cinnamon, cardamom, ginger, cloves and vanilla. You also add more water to cover the pears and simmer away for about 20 minutes. Leave to cool. Serve with mascarpone with a bit of honey in.
It would have been better to remove the cores, but I don’t have a corer anyway. I think I served too much liquid with them; they ought to be sitting in a small puddle, not swimming.

I think they tasted quite nice, but I had a cold, so you’d be better off asking our guests. Great for having people over because you can make them in advance and then serve them straight from the fridge, for less stress on the evening.
