“When it is cold outside, having a substantial salad with a warm dressing really is just the ticket.” It’s not though, is it? A hearty bean cassoulet would hit the spot, or a succulent roast chicken with all the trimmings. But a pear salad? No. This is a great summer dish, and good for a special lunch once in a while.
The salad is a base of rocket leaves with fried pancetta (or streaky bacon) and fried pear quarters in balsamic vinegar. You then use the lovely flavoursome frying pan (well, the pan isn’t tasty; it’s the stuck on fat and stuff, but you get the idea) to make the dressing with butter, honey, mustard and pine nuts. Then top the whole salad with Gorgonzola. (Note: Danish Blue is a good cheap alternative).
Great salad, especially on a summery day!
