50. Asparagus, tarragon & mint omelette

So with that to guide me, I set about making this delicious vegetarian omelette. I halved the quantities to make it for 2 people.

You start off by heating the oven (to finish off the omelette). Then you fry a grated potato for about 5 minutes. Whisk about 4 eggs well (this will make a nice fluffy omelette). Add a handful of parmesan, some mint, tarragon and seasoning. Lorraine’s recipe is not clear, but I’m guessing you also add the potato at this point. Pout mixture into frying pan and cook over a low heat for 3-4 minutes. My frying pan isn’t ovenproof, so I transferred the mixture to a sandwich tin at this point. Add a handful of frozen peas, and a few trimmed asparagus spears.

Cook in the oven for about 8 minutes, and serve with salad.

I’ll have to be honest and tell you that the response to the omelette in the cookingfanatic household was not wholeheartedly warm. One family member who shall not be named doesn’t believe that vegetarian food even exists. “It’s a non-food.” So although he (or she) gave top marks for execution, he (or she) never wants to eat this dish again. Next time, I’ll eat the whole delicious omelette myself!
